According to the New York Times, a viral Campari marketing campaign, and just about everyone on your Instagram feed, the Aperol Spritz was the drink of summer 2018. In case you somehow missed out on the hype, here’s a refresher: the bubbly, electric-orange potion is made with the Italian aperitif prosecco (or whatever cheap sparkling wine you can find at the liquor store) and a splash of club soda. It’s crisp and refreshing, sweet and bitter and, perhaps more importantly, its bright hue is great for ‘grammable content. Essentially, it tastes like a sunny Italian summer straight out of a scene in Call Me By Your Name.
But now that Labour Day weekend has passed and summer has unofficially come to a close, you’re left asking the question: what do you do with that half-full bottle of Aperol sitting on your mid-century liquor cart? We’ve got exactly five answers to that very important query. From a simple Georgian Bay/Aperol mixed drink to a beer-based cocktail, here are a few ways you can take your Aperol obsession into sweater season.
Aperol Cocktails
THE APEROL SMASH
– 10oz Georgian Bay Gin Smash
– 2oz Aperol
– Garnish: Dried Orange Slice
Method: Give your Gin Smash a little twist with some Aperol! This drink is perfect for summer and so simple to make. Fill a stemless wine glass with ice. Pour Gin Smash over ice and add Aperol!
Give it a quick stir and add fresh or dried citrus of your choice!
Aperol Cocktails
HOPEROL FLIP
– 1 oz Aperol
– 3⁄4oz Old Tom Gin
– 3⁄4oz Lemon juice
– 1 Egg white
– 1 1⁄2 oz India Pale Ale
– 1 twist Orange peel (as garnish)
Method: Shake the first four ingredients with ice in a cocktail shaker. Strain into a coupe glass and top with Pale Ale. Add orange peel twist as garnish.
Aperol Cocktails
LEVER DE SOLEIL
– 1 part Grey Goose Vodka
– 1⁄2 part Raspberry Liqueur
– 1⁄4 part Aperol
– 3 parts soda water
– 1 part Prosecco
Method: Build ingredients into a wine glass without ice. Add cubed ice halfway up the glass, add straw and then add crushed ice. Squeeze lemon wedge over crushed ice and garnish with mint sprig.

FIERY HEART
– 1.5 oz Georgian Bay Vodka
– .75 oz Honey Syrup
– .25 oz Goldschlager
-.25 oz Aperol
– Champagne
Method: Shake the first four ingredients with ice in a cocktail shaker. Strain into a coupe glass and top with Champagne.
Aperol Cocktails
GALAXY ESPRESSO NEGRONI
– 1 part Star of Bombay
– 1 part Martini Rosso
– 1 part Aperol
– 0.5 parts Coffee
– Orange wheel and Coffee Bean
Method:Stir ingredients into an ice-filled mixing glass. Fine-strain the liquid into a chilled coupe glass. Garnish with the orange wheel and coffee bean.
